Finding a dairy-free, gluten-free, vegan cheese that melted was not an easy feat. But since we love grilled cheese sandwiches, pizza and casseroles over here, I kept hunting until I found one – Daiya.

Daiya has many options, but I go for the slices and shredded cheese options. I keep the vegan cheddar slices in the fridge for sandwiches, and the vegan shredded mozzarella to sprinkle on casseroles and pizza.

Keep in mind, my family still eats dairy products, and honestly, I’m not brave enough to try this in my mac ‘n cheese. However, for everyday use it’s great.

Especially since dairy can aggravate my daughter’s eczema, and it doesn’t help during sinusitis season either.
